Microwave Crisps



Ingredients:



600g Roosters red potatoes, unpeeled and scrubbed

2 teaspoons of extra-virgin olive oil

1/2 teaspoon salt

Cooking spray







Method:

Slice potatoes into 1/8-inch rounds for thicker potato chips.

For thinner ones if you have a mandolin use it to cut very thin slices. 

Toss slices in a medium bowl with oil and salt to coat evenly.
Coat a large microwave-proof plate with cooking spray.

Arrange some potato slices in a single layer on the plate.

Microwave, uncovered, on High until some slices start to brown, 2 to 3 minutes 
(depending upon potato thickness and microwave power). 

Turn slices over (they will be hot, so take care with your fingers) and continue microwaving 
until they start to crisp and brown around the edges, about 35 seconds for very thin potato slices 
to 2 to 4 minutes for thicker slices. 

Check frequently and rearrange slices as needed to prevent scorching. 

Transfer chips to another plate and allow to cool completely (they'll crisp up more as they cool) 
and repeat the process with remaining slices.

One Pot Honey and Mustard Chicken with Parsnips

Now that the chillier days are here Ralph will be featuring a number of delicious and hearty yet easy and inexpensive One Pot recipes.  I'll start off with this winter warmer, it's a One Pot Honey and Mustard Chicken with Parsnips.









Heat half the oil in a large frying pan or shallow casserole with a lid. Brown the chicken until golden, then set aside. Heat the remaining oil, then cook the onions for 5 mins until softened.


Nestle the thighs back amongst the onions and add the parnips. Mix the stock with the mustard and honey, then pour in. Scatter over the thyme, then bring to a simmer. Cover, then cook for 30 mins (or longer, see tip) until the chicken is tender, then season. Serve with steamed greens and some lovely, buttery mashed potatoes.










Tip.....If you've got time, this casserole will gently bubble away for up to 90 minutes. The meat will be very tender and fall away from the bones
